Hi Kelly! At those ages, I’d skip Epcot, and do two days at MK. I don’t have itineraries that will fit, but see Josh’s cheat sheets: http://www.easywdw.com/category/cheat-sheets/
Those dates, avoid MK the 18th, 19th and 22; avoid HS the 17th, 18th, 19th, 21st, 23rd and 24th, and avoid AK the 17th, 19th, and 24th. You don’t need a hopper–the water park option will be a better use of money!
Charlie, you can adapt this: http://yourfirstvisit.net/2009/11/06/seven-night-walt-disney-world-autumn-winter-spring-itinerary-v2/ Start your Thursday with it’s Thursday, and then just match days. However, on Saturday do the MK stuff it lists for Weds, and skip the Epcot stuff it has on Sat night…
