Kristy, you have picked good days for each park! My itineraries, as you’ve noticed, are both longer and for older kids. You can find one and two day park touring plans in Chapter 6 of my book, some of them designed for little ones and some for everybody.

4/25 avoid AK and MK
4/26 avoid Epcot
4/27 avoid MK
4/28 Avoid Epcot and AK
4/29 avoid MK and HS
So I would revise your park plans, doing HS Monday, MK Tuesday (as you have it), AK weds, MK thurs and Epcot fri.

Tammy, are you renting a car? Getting to and from all parks but MK is much easier from the Cabins at Fort Wilderness if you can drive, and that will give you more of the relaxing feel. See this for more, especially the section near the end on convenience.
Let me know if kids are coming, and if so what ages. For kids 8+, your park day thoughts are fine, but if all are much younger, you’d do less or no Epcot.
